Eric Cooper, president and CEO of the San Antonio Food Financial institution, tells TODAY that “we fundamentally feed about 60,000 folks per week; the need is now 120,000 folks per week, and we’re beautiful working as hard as we are in a position to to meet that need.” He says that food banks are short of financial contributions and volunteers: “Our inventories are going like a flash.”
